Oma's Chicken Enchiladas with a Twist


Sean and I have been cutting back on hamburger meat and I was really craving enchiladas....SO, I called up my Oma and asked her for her amazing Chicken Enchilada Recipe! :D

These pictures make it pretty self-explanatory.... BUT, I will tell you how my Oma told me to make it. 


INGREDIENTS:
  • 3-4 chicken breasts
  • 2 chicken bouillon cubes
  • 1 can of Mild Green Chile sauce
  • 1 small can of Green Chiles
  • Bag of tortillas (6 fit in my 9x13)
  • Sour cream
  • Shredded cheddar cheese (any cheese would do)
  • Mozzarella Cheese
  • Green onions

Step 1: 
  • Simmer the chicken breasts at a temp. of 4 on your stove
  • Add 2 chicken bouillon cubes
  • Once chicken is NOT raw, empty chicken into a medium/large bowl.
  • You can either shred your chicken in a kitchen aide or with a fork and scissors....I chose the fork and scissors, kitchen aide is in storage. :/
Step 2:
  • Pour in about 1/3 of your can of mild green chile sauce in to the bowl of shredded chicken (just to get the chicken moist)
  • Add the whole can of Green Chiles
  • Stir until everything is coated
Step 3:
  • Grease or butter the 9x13 pan
Step 4:
  • Warm the tortillas in a pan at a temp. of 6
  • Begin filling your tortillas with:
    • sour cream
    • chicken mixture
    • cheese
    • sliced green onions
Step 5:
  • Once your pan is full, POUR the remaining can of Mild Green Chile sauce evenly over the enchiladas.
  • Spread cheese to your heart's desire
Step 6:
  • Bake at 350 degrees for 25 minutes

  • Slide oven rack out at 15 minutes and spread the mozzarella cheese and more green onions on top. 
  • Cover pan with tin foil so cheese doesn't dry out for the NEXT 10 minutes!
Step 7:
