WHAT: Banana Cake with a whipped peanut butter & honey frosting topped w/ chocolate chips

For the Cake Batter:
Mom's Banana Cake Recipe (Kayleen Nauman)
Beat until Fluffy:
- 1/2 cup margarine
- 1 1/2 cups sugar
- 2 eggs
- 1 tsp. vanilla
- 2 old bananas & 1/2 cup sour cream
- 2 cups flour
- 3/4 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
For the DeLiCiOuS Frosting:
- 1 cup creamy peanut butter
- About 1 tablespoon of honey (I just poured in until I thought it was good.)
- 1 cup confectioners' sugar
- 5 Tablespoons unsalted butter, softened to room temperature
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1/3 cup heavy cream
- (I didn't have heavy cream so I substituted it with 1/4 cup of milk and a little over 1 tbsp. of butter. You are supposed to melt the butter but I forgot. Turned out great. Just mix it on high speed with your hand mixer.)
There will most likely be EXTRA frosting. Sean discovered this peanut butter honey frosting to be scrumptious on graham crackers :)
