Banana Cake Extravaganza!

WHO: Anyone who loves bananas, creamy peanut butter, honey, and milk chocolate chips will devour this cake recipe

WHAT: Banana Cake with a whipped peanut butter & honey frosting topped w/ chocolate chips

WHERE: Can be eaten anywhere you can imagine

WHEN: At your heart's desire 

For the Cake Batter:
Mom's Banana Cake Recipe (Kayleen Nauman)

Beat until Fluffy:

  • 1/2 cup margarine
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tsp. vanilla
Add:  

  • 2 old bananas & 1/2 cup sour cream
Mix and then add:

  • 2 cups flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
Bake in a lightly greased 9x13 pan @ 350 degrees for 30 minutes.   

For the DeLiCiOuS Frosting:

Peanut Butter Honey Frosting
  • 1 cup creamy peanut butter
  • About 1 tablespoon of honey (I just poured in until I thought it was good.)
  • 1 cup confectioners' sugar
  • 5 Tablespoons unsalted butter, softened to room temperature
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1/3 cup heavy cream
    • (I didn't have heavy cream so I substituted it with 1/4 cup of milk and a little over 1 tbsp. of butter. You are supposed to melt the butter but I forgot. Turned out great. Just mix it on high speed with your hand mixer.)
Make the frosting: In the bowl of a stand mixer with a paddle attachment (or an electric handheld mixer),  add the peanut butter, honey, confectioners sugar, butter, vanilla and salt.  Mix on medium-low speed until creamy and smooth.  Slowly add the cream (milk and melted butter) and beat on very high speed until the mixture is light and fluffy.  Spread on cooled banana cake and eat up! :) Add chocolate chips if desired.

There will most likely be EXTRA frosting. Sean discovered this peanut butter honey frosting to be scrumptious on graham crackers :)
